Egg Roast - Sidedish for Chapathi, Idli, Dosa- recipe with stepwise pictures. What to make for Sidedish? - this is a question arises everyday in Indian Homes. There are a lots of sidedish recipes available and still we people need an easy yet tasty sidedish. Everyone one of us loves Egg, so today i'm gonna make a sidedish recipe with Egg. Lots of egg sidedish recipes are available yet this is one of the tastiest egg recipes i've tasted - Egg Roast. I adapted this recipe from Veena's Curryworld. I just altered the amount of ingredients according to our taste. This is one of the best Egg Roast recipe i would say. We had this with Chapathi, it was awesome. You can have this with any tiifin/breakfast or even with Rice. Give it a try and let me know.
Egg Roast - Sidedish for Chapathi/Idli/Dosa/Rice
Ingredients:
Eggs - 3
Onion - 6 medium
Tomato - 1 medium
Ginger - 1/2"
Garlic - 4 pods
Fennel - 1/2 spoon
Pepper - 1/2 spoon
Curry leaves - 8 - 9
Green chilli - 2
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 1 tsp
Kuzhambu Milagai Thool or Coriander powder - 1 2/2 tsp
Garam Masala - 1/2 tsp
Coriander leaves - few
Oil - 4 tbsp
Method:
With Stepwise Pictures:
Crush the fennel,pepper,ginger and garlic in a mortar and pestle roughly.Heat oil and add the crushed mixture.
Once the mixture is fried well then add the sliced onions,Fry well till the juice of the onions get released
Add the curry leaves and slit green chillies
Fry well till the onions are fried well
Add the spice powders and salt, fry well and add some oil
Once the raw smell of the masala goes add the diced tomatoes
Saute well and close with a lid
Then add water of about 1/4 cup, mix and close it with a lid and wait till it comes to a thick gravy like consistency
Add the eggs , mix and close with a lid and cook
when the onions are caramelized and the mixture consistency is very thick, remove from flame
Serve hot

Note:
- Don't reduce the amount of onions, though you use large nos of onions the gravy you yield is less
- Here i have made this roast for three of us
- Kuzhambu Milagai Thool or Gravy Powder is used in tamilnadu for making gravies you can substitute it with Coriander powder
