Carrot Kootu|Quick Sidedish for Rice|Subhis Kitchen

Carrot Kootu - full recipe with stepwise pictures and video Kootu recipes are always made with the combination of veggies and dal. Kootu is one of the tastiest sidedish and an important recipe item in traditional southindian menu. Kootu has lot of variations, each vegetable requires a different variation. Some kootu require coconut in the last step, but here i didn't add cooconut. Generally kootu is in semi - solid consistency.Do try this recipe and let me know how it turns out for you.

Ingredients:
Chana dal - 2 tbsp
Turmeric powder - 1/4 tsp
Salt
Onion - 2 medium size
Green chilli - 2 -3
Curry leaves - 1 spring
Tomato - 1 small
Carrots - 2 medium size
Chilli powder - 1/2 tsp
Coriander powder - 1  1/2 tsp
Coriander leaves - for garnishing
To Temper:
Oil - 2 tsp
Mustard - 1 tsp
Cumin seeds - 1 tsp

Method:
Wash and Soak 2 tbsp chana dal in hot water for 15 mins
After 15 mins add 1/4 tsp turmeric powder and Salt along with soaked dal
Pressure cook for 3 whistles
Heat a kadai and temper the items given under 'to temper'
Followed by chopped onions
After 2 mins add the slit green chillies
Add curry leaves and saute well
Once the onions are fried well add 1 small tomato chopped  and saute till it turns mushy
Now add 2 medium size carrots chopped into small pieces
Saute well for 3 - 4mins
Add the fried carrots to the pressure cooker
Add 1/2 tsp chilli powder and 1 1/2 tsp coriander powder
Close the pressure cooker lid and cook for 2 whistles
Once the pressure released naturally add coriander leaves, mix well and serve hot with rice

With Stepwise Pictures:
