Carrot Pulao - full recipe with stepwise pictures. Carrot Pulao has many versions , it can be made with any other vegetables, some make it as spicy but today i'll make the classic version of plain carrot pulao. This can be eaten with any spicy kurma or any spicy fries. This one is a perfect recipe for lunch box. I usually make this as a lunchbox recipe for my sister who is a teacher. Ingredients:
Basmati Rice - 1 cup
Carrot - 1/2 cup [very finely chopped]
Onion - 1 finely sliced
To Temper:
Ghee - 2 tsp
Cumin seeds - 1/2 tsp
Cloves - 3
Cinnamon - 1 small piece
Method:
Heat a pressure cooker and add 2 tsp ghee
Once the ghee melts and heats add the cumin seeds
After cumin splutters add cloves
Followed by cinnamon
Saute well until nice aroma arises
Add finely sliced onions
Saute until it turns soft
Once the onion turns pink and soft add the chopped carrots
Saute for 2 - 3 minutes
Now add the rinsed basmati rice
Mix gently
Now add 2 cups water and mix well
Add salt
Cover the cooker lid and cook for 3 whistles
Once the pressure naturally settles down open the cooker
Gently fluff up the rice
Serve hot with any spicy gravy or fries
