Dates Pongal - full recipe with stepwise pictures and video.First of all..HAPPY PONGAL FOR MY DEAR VIEWERS. We generally make basic jaggery pongal for this festival, but i always make new recipe for every pongal and this year it's Dates Pongal. This is the first time i made this recipe, it came out very well. Dates are healthy and tasty. Though dates are naturally sweet i included jaggery in this recipe, beacause pongal is incomplete without jaggery. Try this recipe and share your experience with me. Thanks in Advance!!!

Ingredients:
For Jaggery Syrup:
Jaggery - 2 cups
Water- 1/2 cup
For Pongal:
Raw rice - 1 cup
Moong dal - 1/2 cup
Salt - a pinch
Water - 4 cups
Milk - 1 cup
Ghee - 2 tsp
To Temper:
Ghee - 2 tsp
Coconut Bits - 2 tbsp
Cashew - 2 tsp
Cardamom powder - 8[roasted and powdered]
Method:
Roast Cradamom in a hot kadai for a minute
Transfer to a blender & grind coarsely
Wash and soak 1 cup raw rice for 30 minutes
Add it to the pressure cooker
Similarly wash and soak 1/2 cup moong dal for 30 minutes
Add it to the pressure cooker
Add 4 cups water
Also add a pinch of salt
2 tsp ghee
Add 1 cup Milk
Mix once, cover and cook for 5 - 6 whistles
Meanwhile, add 2 cups Jaggery in a kadai
Add 1/2 cup water, mix well
Cook till the Jaggery melts and comes to slightly thick consistency
Remove from flame, filter and keep aside
Open the pressure cooker once the pressure naturally settles down
Mash it with a ladle
Add half of the syrup and mix well
Switch on the flame, add the remaining syrup
Add the chopped dates and Cook for 2 - 3 minutes
Heat a kadai add 2 tsp ghee
2 tbsp coconut bits
After 2 minutes add 2 tsp cashews
Ground cardamom powder
Saute well
Add it to the pongal
Mix well and serve hot
