Onion Tomato Chutney

Onion Tomato chutney is one of my favourite chutney, as it goes well with idlis and dosas. The spicy taste of this chutney wants me to eat more idlis. There are many types in this chutney, the ingredients may vary. Some people add extra spices according to their way. This chutney i use here is an ordinary chutney with common ingredients but with some additional flavour. Yes, i use mint, coriander and curry leaves, this gives an extra-ordinary flavour to the chutney.


Ingredients:

Onion - 3 (medium)
Tomatoes - 5 (medium)
Red chilli - 6
Ginger - 1 tsp
Mint leaves - 7-8
Coriander leavees - 4 stems
Curry leaves - 6-8
Oil - 1 tbsp
Salt - as required

To Temper:
Oil - 1 tbsp
Mustard - 1 tsp
Curry leaves - 8-10

Method:
Keep the veggies ready


In a pan add oil, when it is heated add the red chillies and fry for 4 mins ( saute continuously, don't make the chillies to get burnt) and keep aside


In the same pan add the ginger followed by the onions, saute well


Once the onions are fried well, add the tomatoes and fry , add some salt to fasten the saute process


In the meantime, soak the leaves in water


Once the onion - tomato mixture gets fried well, add the mint,coriander and curry leaves , mix well once and switch off the flame immediately( do not fry the leaves in flame for long)


Grind everything and transfer it to a bowl, temper the items given under 'to temper' and add it to the bowl


Serve with idli/dosa
