Ingredients:
Maida - 1/2 cup
Salt - add little salt [idli batter already contains salt]
Idli batter - 2 cups
Hing/Asafoetida - 2 pinches
Onion - 2 medium sized
Green chilli - 2
Curry leaves - 1 spring
Baking soda - 1/8 tsp
Hot oil - 1 tsp
Oil to fry
Method:
Add 1/2 cup Maida in a bowl
Add little salt
Add 2 cups idli batter
Add 2 pinches hing
Add 2 medium sized onions finely chopped and 2 long green chillies finely chopped
Add 1 spring chopped curry leaves
Now add 1/8 tsp baking soda, this ensures crispier & fluffier bondas
Finally add 1 tsp hot oil , this is the most important step adding hot oil adds more crispiness and gives street style bondas
The bonda batter should be thick so that the bondas will stay in shape while frying in oil
Now heat oil & take a little batter , directly drop in hot oil
Deep fry till it gets golden color
Serve hot with Sauce/Sambar/Chutney
