Pavakkai Varuval/Spicy Bittergourd Roast

Pavakkai Varuval/Spicy Bittergourd roast - with stepwise pictures. Almost everyone hates paavakkai, me too😅. Because you can do whatever to this vegetable, but it'll never lose its identity ~ bitterness. There are so many tips to remove bitterness in this vegetable. I'll choose my mom's tip. Ofcourse this is not a new one, but some people wouldn'y know this. So i'm sharing this recipe.

Pavakkai Varuval/Spicy Bittergourd roast - Recipe with Stepwise Pictures


Ingredients:

Paavakkai - 5 small
Onion - 1
Tomato - 1
Sambar powder - 1 tbsp
Turmeric powder - 1/4 tsp
Salt
Oil - 2 tbsp+1tsp

Method:

Cut the paavakai into thin slices
Soak it in water for 2 mins and rinse well in running water
Now add curd and salt to the pavakkai slices, let it soak for 30 mins
After 3o mins in a kadai , add 2 tbsp oil and add the pavakkai
Fry till it turns crispy
In another kadai add oil and  add the chopped onions and saute well
Then add the tomatoes and saute well
Once it is fried well add to the crispy pavakkai mixture
Add the spice powders and saute till everything mix well and the raw smell goes
Serve tasty pavakkai with rice

With Stepwise Pictures:

Cut the paavakai into thin slices


Soak it in water for 2 mins and rinse well in running water


Now add curd and salt to the pavakkai slices, let it soak for 30 mins


After 3o mins in a kadai , add 2 tbsp oil and add the pavakkai by squeezing it well without curd


Fry till it turns crispy


In another kadai add oil and  add the chopped onions and saute well


Then add the tomatoes and saute well


Once it is fried well add to the crispy pavakkai mixture, Add the spice powders and saute well


Fry till everything mix well and the raw smell goes


Serve tasty pavakkai with rice


Note:
Soak pavakkai in curd and dispose the curd, don't add it to the roast, as it contains full bitterness
Squeeze the curd well before adding it to the kadai
