Semiya Biryani/Vermicilli Biryani - an easy recipe with stepwise pictures. Semiya Biryani is a tasty recipe which you can have it for evening tiffin ot you can also have it in the afternoon for lunch with raita. It tastes good when you have it with coconut chutney, you'll love the combination. Unlike rice biryani, this semiya biryani can be prepared in a short time. The cooking time of the semiya is also less. Semiya selection is very important for this recipe. Don't choose cutting semiya use thin semiya (i used anil semiya here, which is thin, fine and soft). Soft and thin semiyas will give a nice texture to the biryani. If you are using roasted semiya then it is fine, if not roast the semiya just for 1-2 mins. Don't roast more than that, U'll loose the soft texture of semiya. So be careful while roasting. This semiya biryani i have made here was just melted in my mouth, Such a soft texture. Semiya Biryani/Vermicilli Biryani - Recipe with Stepwise Pictures
Ingredients:
Semiya - 1 cup
Onion - 1
Tomato - 1
Green chilli - 2
Carrot - 1 small
Beans - 3
Chicken Masala - 1 tsp
Biryani Masala - 1 1/2 tsp
Chilli powder - 1 tsp
Garam Masala - 1 tsp
Turmeric powder - 1/4 tsp
Salt
Curry leaves - 1 spring
Curd - 1 tsp
Coriander leaves - a fistful
Mint leaves - a fistful
To Temper:
Oil+ghee - 2 tbsp
Cumin seeds - 1/2 tsp
Fennel seeds - 1 tsp
Cardamom - 3
Cloves - 3
Cinnamon - a small piece
Star anise - 1
Stone flower - small piece
Bay leaves - 2
Method:
Roast the semiya for just 1-2 mins and keep aside. In a pan temper the items given under 'to temper' , add green chilli, onion and saute well
Add crushed ginger and garlic
After a nice aroma and the onions are fried well , add the tomatoes
Add the veggies and fry for 3 mins
Add the spice powders and salt, mix well till the raw smell of the masala goes
Add curd and mix well
Add 2 cups of hot water, curry leaves and allow it to boil
Once it is boiling well add the semiya
Mix well
Cover and cook for 3-4 mins
By this time the semiya will be cooked soft , mix once and remove fromflame
Add a tsp of ghee and close with a lid , let it rest for 2 mins
After 2 mins mix gently with a ladle and Serve hot
