LadiesFinger fry/ Vendakkai Poriyal - Full recipe with Stepwise Pictures. Many of us hate Lady's Finger due to its sticky prooperty. But Lady's finger is one of the healthiest vegetable and also available in almost all the seasons which should not be avoided.


Health benefits of Lady's Finger:

For diabetes:

I was told that Lady's Finger is good when it comes in controlling the blood sugar level. It is also good and safe to consume Lady's Finger and its water during Pregnancy. Okra water can also reduces the blood sugar level in diabetic patients and Gestational Diabetic patients which happens during Pregnancy

Health Heart:

Lady's Finger helps in maintaining a healthy heart. Potassium present in Lady's Finger plays a vital role for the healthy heart function.

Constipation:

It has a wonderful laxative property and it soothes the intestinal tract due to the presence of mucilage in it.

Keeping Healthy Kidney:

Lady's Finger reduces the risk of Kidney damage. Generally kidney damage happens to people who are diabetic. Regular consumption of Lady's Finger reduces blood sugar level which inturn reduces the chances of Kidney damage.

Ingredients:

Lady's Finger - 250 gms
Onion - 2
Tomato - 2
Chilli Powder - 1 1/2 tsp
Coriander Powder - 2 tsp
Turmeric Powder - 1/2 tsp
Salt

To Temper:
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp

Method:

Wash and soak the Lady's Finger/Vendakkai for few mins
Cut the Lady's Finger into small cubes
Heat Kadai add oil and transfer the diced Lady's Finger and fry it
This step is to remove the stickiness of the vendakkai
Now you can see the gum like thing is coming from the veggies
This is removal of stickiness, fry few more mins till it gets lightly crispy not more
Heat kadai and add the items given under 'To Temper'
Saute well
Add the Onions and fry till the onion becomes soft
Add the tomatoes and fry till it becomes mushy
Now add all the spice powders and fry for 3 mins
Add the Lady's Finger and mix so that the masalas get coated well
Sprinkle 2 tbsp of water
Cover with a lid  for 8 mins stirring at regular intervals
Once the masalas coated well and the raw smell goes switch off the flame
Serve hot with rice

With Stepwise Pictures:

Wash and soak the Lady's Finger/Vendakkai for few mins
