Sooji Kheer/Rava Kheer - Full recipe with stepwise Pictures and VIdeo. This recipe is another rainy day and summer recipe. You can consume this hot rava kheer on a rainy day evening. You can make this kheer as an accompaniment to your lunch/ breakfast ... I've chosen fine rava for this kheer so that it is perfect for this recipe and also cooks easily and quickly. Let's get started.

Ingredients: [for 4 members]
Rava - 1/2 cup
1 tsp cashews
1 tsp raisins
Milk - 3 cups
Water - 1/2 cup
Sugar - 4 tbsp
Ghee - 1 tbsp
Cardamom powder - 1/2 tsp
Method:
With Stepwise Pictures:
Heat 1 tsp ghee and add cashews, fry till gets the golden color
Add 1tsp raisins and fry and keep aside'
Add 1/2 cup sooji/rava and roast in ghee for 3-5 minutes [ Since this rava is fine variety it got roasted in 3- 5 minutes..if you are using roasted rava no need to roast in again]
Once the rava gets cooked Add in 3 cups milk ..mix well to avoid lumps
Cook for few minutes or until it gets cooked
Once it thickens add 1/2 cup water, mix and boil well
Add 4 tbsp sugar, Mix well and cook for 2 minutes
Finally, add 4 crushed cardamoms
Add the cashews and raisins fried in ghee
I want my kheer to be in flowing consistency..because the kheer will get thickened after some time
remove from flame
Serve hot
