Chicken Dum Biryani - full recipe with stepwise pictures and video. Biryani is an aromatic delightful dish loved by all. The major ingredients in this dish are Chicken and Basmati rice. Anyone can make this dum biryani at home as this is very easy to make. It is a classic mughalai dish , it is an evergreen recipe for its taste. Dum Biryani is differnt from the regular biryani. In this biryani rice is cooked seperately, chicken is marinated and cooked with the masalas. Finally the masalas and rice are layered one by one and cooked in dum. Usually dum biryani is made with sealing the plate with chapathi dough to avoid the steam escaping out. But i simply covered the plate and placed a heavy weight on top, because i don't want to waste the atta flour. Chicken - 250gms
Curd - 4 tsp
Lemon Juice - 2 tsp
Garam Masala - 1/2 tsp
Turmeric Powder - 1/4 tsp

Method:
For Marinating Chicken:
- Take 250 gms chicken, clean well and add the ingredients given under 'for marinating chicken'
- Keep aside for minimum 30 mins
- You can also marinate it maximum of 2 - 3 hours
For Cooking Rice:
- Heat 4 cups water
- Once it comes to a rolling boil add the whole spices[Cardamom - 2, Kalpaasi - 1,Cinnamon - 1",Cloves - 5,Marattimoggu - 1,Pepper - 7,Bay leaves - 2,Mint leaves - a fistful]
- Add washed and soaked[for 30 mins] Basmati Rice and little salt
- Once the rice has cooked for 75% remove from flame, filter and keep aside
For Dum Biryani:
- Heat 3 tbsp oil+2 tsp Ghee followed by 1 tsp fennel seeds
- Add the whole spices[Cardamom - 2,Kalpaasi - 1,Cloves - 4,Marattimoggu - 1,Bayleaf - 2,Cinnamon - 2]
- Followed by Green Chillies
- Add 2 chopped Onions
- Once the onion turns soft add the tomatoes
- Saute well till it turns mushy
- Add Ginger Garlic paste and till nice aroma arises
- Add mint and coriander leaves
- Mix well
- Add the marinated chicken, mix well
- Once the chicken cooked 75%, layer the cooked rice
- Add the mint and coriander leaves
- Add the fried onions
- Dissolve 1/8 tsp food color powder in 1/4 cup water and add it to the rice,don't skip this step as it avoids dryness in rice
- Sprinkle 1/2 tsp garam masala
- Cover the vessel with a plate and place a heavy weight on the plate to avoid the steam from escaping out
- Let the rice be in Dum for 20 - 30 minutes
- After 20 - 25 minutes gently fluff up the rice and serve hot
