VathaKuzhambu|SouthIndian Vathal Kulambu Recipe - full recipe with stepwise pictures and video. Vatha Kulambu is a famous south indian gravy recipe. This gravy also has an another version which is also called as Kalyana Kaara Kuzhambu This has a heavenly taste which has spicy, tangy, sour taste. It tastes best when served with rice. This gravy tastes best when it is made with Sesame Oil. Vatral is another important ingredient, we can use either Manathakkali Vatral or Sundakkai Vathal or both. Here i used both the vathals for extraordinary tatse. Always serve this Vatha kulambu with mild kootu, poriyal and appalam/Vatral Try this spicy tangy recipe and let me know how it turns out for you. Ingredients:
Tamarind - Lemon size
Small Onion - 15 -20
Curry leaves - 1 sprin
Tomato - 1
Drumsticks - 2
Rock Salt
All purpose curry powder - 2 tbsp
Sambhar Powder - 1 tbsp
Chilli powder - 1/2 tsp
To Grind:
Coconut bits - 1/4 cup
Poppy seeds - 1/4 tsp
To Temper:
Sesame oil - 3 tbsp
Mustard - 1 tsp
Methi - 1/4 tsp
Vadagam - 1 tsp
Garlic - 15 -20
Sundakka Vathal - 1 tbsp
Manathakkali Vathal - 1 tbsp

Method:
Soak a lemon sized tamarind in water along with rock salt
Heat a kadai and add the items given under 'to temper'
Cook well in oil
Now add onion and saute well
After 2 mins add the drumstick and the tomatoes
Saute well and let the veggies cook in the oil for 3 -4 mins
Add rock salt and mix well
After 5 mins the veggies have fried well in the oil
Now add 2 tbsp all purpose curry powder and 1 tsp sambhar powder
Add 1/2 tsp chilli powder
Add 2 cups tamarind extract
Cook till it turns thick, it will take around 10 - 15 mins
After 15 mins the gravy turns thick
Now grind the ingredients given under 'to grind' to  a smooth paste
Add the coconut paste to the gravy and cook for 5 more mins
Mouthwatering Vathakulambu is ready to serve
