Instant Karthigai Appam - full recipe with stepwise pictures and video. Karthigai appam is usually made with rice or rice flour, but we make this appam with wheat flour if we have no time to make those recipes. Karthigai Deepam is a festival which we lit lamps everywhere in our home similar to diwali. We decorate our whole house with flowers, Put maa - kolam on our main entrance. Me and my sister decorate our house with led color lights which brings a special brightness to our home during this festival. During every karthigai deepam we buy a new lamp. Not only us everyone buys a new lamp every year. This year we bought a pithalai vilakku which helps the lamp to lit for extra few hours. We also fire crackers during karthigai deepam, the whole streets will be glittering on that day.

Ingredients:
Wheat flour - 2 cups
Maida - 2 tbsp
Rava - 2 tbsp
Jaggery Powder - 1 cup
Cardamom seeds - 5
Grated coconut - 3/4 cup
Salt - a pinch
Water
Banana - 2
Cumin seeds - 1/2 tsp
Baking soda - a pinch
Oil - to fry
Method:
Add 2 cups wheat flour/atta in a wide bowl
Followed by 2 tbsp Maida
Add 2 tbsp rava/sooji
Add 1 cup Jaggery powder
Crush 4 - 5 cardamom seeds and add
Add 3/4 cup grated coconut
Add a pinch of salt
Mix the dry ingredients first
Now add required water little by little
Mix well to form thick and flowing consistency batter
Add 2 banana in another bowl
Mash it with a fork
Add it to the batter
Mix well
Add a pinch of baking soda
Mix well
Heat oil and pour a ladle full of batter in hot oil
Wait till it comes up
Once it comes up flip to the other side
Flip each side once in a minute and cook till it turns golden color
Once Its weight increases and turns to a golden color remove from flame
Serve hot
