Indians especially South Indians day would be incomplete without Rice. Biryanis or Variety rice are perfect substitute instead of repeating Sambar, Gravies & Rasams. When it comes to Variety Rice/Biryanis there are a lot of varieties but making a quick & healthy rice is always a challenge. Well, this Masala Rice will be a perfect option for Tasty Lunch/Dinner. This Masala Rice can be made quickly without Meat/Egg or Vegetables. I made this Rice in Kadai, you can make in Pressure cooker too. Do try this recipe and share your experience with me.

Ingredients:
Oil - 2 tbsp + 2 tsp
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Pepper - 1 tsp
Cardamom - 2
Cloves - 4
Cinnamom - 1
Kalpaasi - 2
Star anise - 1
Onion - 1/2 cup
Tomato - 1/2 cup
Cashews - 5 - 6
Chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Garam Masala - 1 tsp
Salt - 1 tsp
Ginger Garlic paste - 2 tbsp
Green CHilli - 2
Curd -1/3 cup
Rice - 1 cup
Water - 2 cups
Carrot - 1/4 cup grated
Method:
- Heat 2 tbsp oil & add fennel, cumin seeds, pepper, cardamomcloves, cinnamon. kalpaasi & star anise
- Roast till golden
- Add 1/2 cup finely sliced ONions
- Saute till it turns slightly golden
- Add Tomatoes
- Saute till soft & mushy
- Add 5 - 6 Cashews & cook
- Add 1/2 tsp Chilli powder
- Add 1 tsp Coriander powder
- Add 1/4 tsp Turmeric powder
- Add 1 tsp Garam Masala
- Add 1 tsp Salt
- Saute and cook till oil seperates
- Add 2 tbsp Ginger Garlic paste
- Add 2 Green chilli
- Cook till oil seperates
- Add 1/3 cup Curd
- Now oil has seperated
- Add 1 cup washed Rice
- Mix once
- Add 2 cups Water & mix well
- Finally sprinkle 1/4 cup grated Carrot
- Mix well, Cover & cook for 10 - 15 minutes, Give a resting time of 5 minutes
- Now rice has cooked perfectly
- Add 2 tsp Oil
- Gently Fluff up the Rice & serve hot
With Stepwise Pictures:
Heat 2 tbsp oil & add fennel, cumin seeds, pepper, cardamomcloves, cinnamon. kalpaasi & star anise
Roast till golden
Add 1/2 cup finely sliced ONions
Saute till it turns slightly golden
Add Tomatoes
Saute till soft & mushy
Add 5 - 6 Cashews & cook
Add 1/2 tsp Chilli powder
Add 1 tsp Coriander powder
Add 1/4 tsp Turmeric powder
Add 1 tsp Garam Masala
Add 1 tsp Salt
Saute and cook till oil seperates
Add 2 tbsp Ginger Garlic paste
Add 2 Green chilli
Cook till oil seperates
Add 1/3 cup Curd
Now oil has seperated
Add 1 cup washed Rice
Mix once
Add 2 cups Water & mix well
Finally sprinkle 1/4 cup grated Carrot
Mix well, Cover & cook for 10 - 15 minutes, Give a resting time of 5 minutes
Now rice has cooked perfectly
Add 2 tsp Oil
Gently Fluff up the Rice & serve hot
Note:
If you cook in Pressure Cooker cook for 3 whistles
